I am required to do an internship for grad school. Do I choose one that is easy and convenient or one that pushes me out of my comfort zone?

I think the most important thing will be to find an internship that interests you. It's a good idea to push yourself out of your comfort zone, since an internship that allows you to do that will definitely be one that teaches you new skills and makes you more confident when it comes time to apply for a full time job. However, if you find an internship that you love, the challenges that you're faced with will seem much more manageable than if you're not really interested in the internship. You might not even realize all of the difficulties that you've faced, because they seem more like exciting challenges than problems.
First, consider what you're trying to get out of graduate school as a whole--if you're not looking to stay static (i.e. you're looking to actually grow and evolve in your skill set and abilities), don't choose an internship that is super easy and doesn't teach you anything new. You don't want to do an internship that is 100% unknown territory for you, on the other hand, because you want to be able to build off of a foundation you might already have. Choose an internship that is 40-50% comfortable and 50-60% new territory--this way, you will find confidence in what you are already skilled at, and have the self esteem and preparation needed for you to acquire new skills in the rest of the internship which might revolve around tasks or practices you aren't used to. Ultimately, you don't want to have finished grad school feeling like you chose easy routes whenever you had to choose positions and opportunities--choose an internship that will propel you in the direction you want to go career-wise.
Honestly, this all depends on your current workload/schedule. I would suggest talking to other graduate students and/or a career counselor or advisor and asking them what their opinions are. Whatever you decide, make sure that the internship is interesting to you regardless of its convenience/workload!
